If your family is anything like ours, there are certain foods and certain dishes that everyone really enjoys. Before we started to change our eating habits, one of our favourite things to do (and probably the most unhealthy) was to get fast food.
It would be foolish to say that we don’t sometimes think about food that we know is bad for us, but we can’t help but want it. One of those dishes for the children at least is Chicken Nuggets. I don’t know what it is about them that drives the children wild, but mention “its nuggets for tea” and they go mad with excitement.
I had to find some way to serve something similar, in a healthy, Keto way, and I think i’ve cracked it! Have a go for yourself, I’ve tried this a couple of times with the kids and have had some very pleased and happy faces, and pleased and happy parents knowing that they are enjoying something so deliciously healthy!

Ingredients
500g Skinless Boneless Chicken Breast 1/2 Cup Mayonnaise
1 Cup Almond Flour
Salt and Pepper (For flavour)
1 tsp Mixed Herbs
1/4 Cup Grated Parmesan
Salt Water (to soak chicken in)
Directions
Preheat your cooker to 200 degrees Celsius. Whilst the oven heats up, cut your chicken into bite sized pieces. I’ve found that the bigger they are, the longer they take to cook and run the risk of burning the coating.
Put the chicken into a large bowl together with the Salt water and leave for 15-20 minutes to brine. This part is important to make sure the coating sticks to the chicken whilst being cooked.
Whilst the chicken does its thing, mix together the Almond Flour and parmesan. Add the Salt and pepper. At this point, you can get creative. I’ve suggested in the ingredients to add Mixed Herbs at this point. The truth is, you can add any herbs and spices you like. I did try some Paprika in the first batch, which the children complained was too spicy, but add whatever you want. BBQ Spices? Chilli Powder? Go for it.
Once the 15-20minutes are up, take the chicken out of the brine and dry. Next, with the Mayonnaise in one bowl and the mixed dry ingredients in another, put the chicken pieces one by one, firstly in the Mayonnaise, and then when it has a light covering, put into the dry ingredients covering them completely.
