I’ll be honest, I don’t like to use the word ‘diet’, especially on this blog – and so close to Christmas no less! I have recently decided to cut back though, ahead of the many, many, feasts I plan to endure during the festive period..
SO! I’ve been looking at alternatives to my favourite things! This Bhaji recipe is super simple, yummy, and keeps it so you’re not missing out on all the good stuff!
Ingredients Low calorie cooking s pray – I use fry light, costs between £1.50 – £2.50 3 Brown onions, thinly sliced – I used a mandolin 1 Medium Carrot, grated 1 tsp Turmeric 1 tsp Hot chilli powder 2 tsp Ground Coriander 2 tsp Ground Cumin 1 tsp Ground Ginger 70g Gram Flour – Usually found in the world section of your supermarket (U.K) 1 tsp Salt 1 tbsp Tomato Puree 1 tsp cracked black pepper Method Preheat the oven to 210˚C. Line a baking tray with grease proof paper, and give the parchment a light grease to stop the bhajis sticking to the tray. In a bowl, mix together the tomato puree with the water. Set aside. Spray a medium frying pan with the oil spray and set on a medium-high heat. Stir-fry for around 5 minutes until the onions begin to turn translucent. Add all of the spices and salt to the carrot onion mix and continue to stir-fry for a further 6-7 minutes until the spices are well distributed and the onion and carrot have softened slightly. Transfer to a large bowl to cool slightly. Add the flour to the cooked vegetables and use a fork to stir it through. Add the tomato puree mixture. Using your hands, form 12 good sized balls and place them on the prepared baking tray – or your desired size! Bake the bhajis for 10 minutes, and then lightly spray with the light spray before cooking for a further 10 minutes or until golden brown. Enjoy! Love ❤️ Follow Me!
