Hello foodies,

Perfect with some crusty bread, this quick, easy , hot, spicy , tasty and above all “healthy” fish soup is a favourite of mine. It can also be made with chicken if you prefer.

Look out tomorrow for which “Healthy bread brand” I used.

Spicy Sea-bass soup with gluten free bread

Serves: 1-2 Prep Time: Cooking Time:

Ingredients

  • 2 Seabass fillets cut into medium pieces
  • 4 Vine tomatoes / 2 big tomatoes – sliced
  • 1 red chilli – sliced
  • 2 garlic cloves – crushed
  • 2 sticks celery – sliced
  • 2 leeks – sliced
  • 1 red onion – sliced
  • Half teaspoon turmeric
  • Pinch of sea salt
  • Pinch of black pepper
  • 1 cube vegetable stock
  • Gluten free bread slices

Instructions

Prepare the vegetables and herbs (sliced and crushed).

Put a pot on low / medium heat and toss all the vegetables and turn until their aromas develop (don’t burn them).

Now add the stock with 500 – 600 mls water and bring to boil.

Immediately add the cut pieces of fish (do not stir as this will break the fish). Add the black pepper and salt.

Once boiled ( 20 – 30 mins) remove from heat.

Serve in bowls with slices of gluten free bread.
